yucca

I'm having my first experience with a yucca.  I baked it in the oven, skin on, for about an hour and a half with some sweet potatoes.  I'm exploring tubers and roots to soften the no-grains road.  I'm just peeling and eating it as I go with no embellishments.  It's texture is hearty.  It doesn't disintegrate down to nothing with a few chews.  I know I'm eating something  It's soft and flaky at the same time, like a good biscuit.   The flavor is very mild, slightly nutty.  I think it would make a really good ingredient to base some desserts off of.  Fruit and cream torte on yucca instead of cake, or banana, almond butter, and yucca cookies.  Hooray for inspiration!  Energy levels have been more consistent lately.  That's helpful for everything.  :-)

Katie helped me clean my room. That basically means to sit and hang out with me and listen to me ramble tangentially while I clean and offer suggestions occasionally.  Now I have a desk!  Hooray!  Marc continues to be awesome, though busy with winter session classes and deadlines at work.  We and his buddy played a game called Brass last night.  It's a resource strategy game based on England's Industrial Revolution.  It was pretty fun.
